We love cinnamon bread for any time of the day, not just as a breakfast item. This has a nice texture, like the cinnamon yeast breads. So rich and full of flavors!
Ingredients for 1 loaf (about 12 slices)
2 cups Extra White Gold All Purpose Flour
1 tsp baking soda
1 1/2 cups sugar, divided
1 cup buttermilk, room temp (or plant based milk +1 tsp vinegar)
1 large egg, room temp (1 chia seed egg)
1/4 cup avocado/ canola oil
3 tsp cinnamon
3 Tbsp. gluten free granola
- Preheat oven to 350 deg F. In a large bowl combine, gluten free flour, baking soda and 1 cup sugar.
- Combine in a separate bowl liquids. Stir into the dry ingredients bowl just until combined. In a small bowl combine cinnamon and 1/2 cup sugar.
- Line the pan (9" by 5") loaf pan with parchment paper. Pour third of batter into the pan. Sprinkle with half the cinnamon sugar. Carefully spread with remaining batter and sprinkle with remaining cinnamon sugar. Cut through batter with a knife to swirl. Spread granola on top.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool 10minutes before removing from pan to a wire rack to cool completely.
