Tomato Za'atar Galette


This tomato galette is a must-try summer dinner! Delicious ,buttery pastry surrounds the savory cheese, herb, and cherry tomato filling. Ensure that your Za'atar (this earthy, lemony Mediterranean spice) is gluten free certified.
Ingredients:

For the dough

2 1/2 cups Extra White Gold 1:1 Bread Flour
1 teaspoon dry yeast
1- 1 1/4 cups water (Add the water gradually to the flour)
2 tablespoons EVOO
1/2 teaspoon salt

2 tablespoons Extra Virgin Olive Oil

Handful of cherry tomatoes

Gluten free certified Zaatar

1 cup goat cheese spread (store bought) or mozzarella cheese

1 egg, for an egg wash



PREPARATION

  1. Line a 10-inch round baking dish with parchment paper, or lightly grease a 10-inch oven proof skillet.
  2. In a medium bowl, mix together the flour, yeast, add water gradually, oil, and salt until you have reached to a nice smooth(a little sticky) dough. Refrigerate for 1-2 hours.
  3. Preheat the oven to 375°F. Flattened the dough to a 10 inch circle on a gluten free floured surface.
  4. Spread the goat cheese in the center of the dough, leaving a 1-inch border all around. Lay the tomatoes on top. Fold the edges of the dough over the edges of the tomatoes, leaving the center of the filling exposed. Brush the crust with egg wash to help it brown in the oven. Bake for 30-35 minutes until golden brown. Garnish with Zaatar or flaky sea salt, and enjoy.
