Gluten Free Pita
1 pkg (1.1 LB) gluten Free Bread flour
1 Tbsp. Dry yeast
1 Tbsp. Sugar
2 Tbsp. Canola oil
1.5 cups lukewarm water
1 tsp. salt

How to make it?
  1. Combine flour, yeast, sugar in the bowl of a stand mixer; whisk until well mixed, about 1 minute.
  2. Add water( starting with 1 cup of water), oil, and salt to the bowl until well combined, about 1 minute. If the dough appears dry, add water gradually. Mix on medium speed;  until a soft - sticky dough comes together, about 5 minutes.
  3. Line 2 baking sheets with parchment paper. Divide dough into 10 equal balls; roll each piece on a floured surface to a 6-inch circle. Place on the prepared baking sheets; cover with plastic wrap and set aside for 1 to 1 1/2 hours.
  4. Preheat the oven to 450 degrees F (230 degrees C). 
  5. Bake in the preheated oven until puffed and lightly golden, 5 to 7 minutes.
  6. Remove from the oven, cover with a dry clean towel.
