This is the perfect gluten free dough recipe for gluten free knotted bread rolls.
For a great presentation, place the rolls almost touching each other. The result will be a beautiful large knotted/ braided pastries that everyone will love to share.
Ingredients
For the Dough
500 grams/1.1 LB gluten-free Extra White Gold bread flour, plus extra for dusting
1/3 cup (40 grams) granulated sugar
1 tablespoon (11 gr) instant dry yeast
2 large eggs
1/2 cup (120 ml) lukewarm (100 °F- 110 °F) milk or water plus 2- 6 tablespoons
1/2 cup unsalted butter (100 grams), melted not hot
1/4 teaspoon salt
vegetable oil, for greasing
1 cup Extra Olive Oil
1/4 cup chopped Parsley or Cilantro
2-4 garlic, chopped
1/2 cup parmesan cheese (optional)
Egg wash (1 egg mixed with 1 tablespoon water)
Directions
Make the dough:
- Combine flour, sugar and yeast in a bowl of a stand mixer. Blend for 1 min. Mix in a small bowl, eggs and 1/2 cup water pour into the flour mixture, using dough paddle hook, mix until dough forms. Add more liquid if needed( sticky- smooth dough consistency).
- With the mixer on low speed, add butter, a spoonful at a time and then salt. Mix dough on medium speed for 4 minutes until smooth.
- Spray a bowl with oil and return the dough to the bowl, turning it to coat with oil. Cover with plastic wrap and let rise in fridge overnight.
Topping dressing:
- mix oil, chopped garlic, chopped herbs, set aside.
To assemble:
Line the bottom of ta 9" by 13" pan with a parchment paper.
- Divide the dough into 18-20 pieces (about 90 gr each). Roll out each piece on a well-floured parchment paper. to a small log.
Shape as a small challah (8 shaped challah) or as a knot. - Place the knotted rolls in the pan. Let them rise for another 30 minutes, at room temperature.
- Brush with an egg wash or brush generously with the oil mixture. Sprinklr parmesan cheese.
- Preheat oven to 350°F (175°C). Place a dish filled with boiling water at the bottom of the oven.
Bake for 30-40 minutes, until golden brown. - Remove from the oven. Let it cool slightly before serving.
