This Gluten Free Irish Soda Bread will be the star of your show. It is easy to make, and delicious. Leftovers can be kept in a Ziplock bag, in the freezer.
Baking Tips: We used Extra virgin olive oil in our recipe. For a milder and sweeter soda bread flavor, use soft unsalted butter.

Ingredients:
3 1/2 cups Extra White Gold bread flour
1 1/2 teaspoons baking soda
1 teaspoon gluten-free baking powder
3/4 teaspoon salt
2 tablespoons sugar
1 tablespoon honey
3 tablespoons Extra Virgin Olive oil or unsalted butter, softened
1 large egg
1 cup buttermilk
1/2 cup raisins (optional)
How to make?
- Preheat oven to 450°F. Line baking sheet with parchment paper.
- In medium bowl, whisk together bread flour, baking soda, baking powder and salt. Add in the raisins(optional).
- In large mixing bowl, mix sugar, oil or butter, honey, egg and buttermilk. Mix the dry ingredients with the wet ingredients. The dough should be sticky.
- Dust a parchment paper with gluten free flour. Place the dough on the parchment paper. Knead gently for one minute. Oil your hands, place dough on cookie sheet; pat into circle about 1 1/2 inches thick. With sharp knife, cut X across loaf about 1/2 inch deep. Sprinkle flour on the bread.
- Bake at 450°F 5 minutes. Reduce heat to 350°F, and bake 20- 25 minutes longer or until golden brown. Remove from pan to cooling rack. Cool completely before slicing.
