Gluten Free Apple Coffee Cake with Nuts & Caramel

Moist and delicious apple cake with brown sugar and nuts.
Ingredients: (Makes 2 coffee loaf cakes or 9" X 13" cake)

1/2 cup soft unsalted butter or coconut oil
1 cup sugar
2 large eggs or egg replacer
1 tsp. vanilla extract
2 cups Extra White Gold All purpose cup to cup flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1 cup plant based yogurt or sour cream
2 peeled and chopped large apples (Granny SmithΒ  apples would be great here!)

Topping

1/2 cup packed light brown sugar
1 tsp ground cinnamon
1/4 cup soft butter or coconut oil
1/2 cup chopped nuts (almonds, walnuts etc..) (optional)

  1. Preheat your oven to 350 deg F. Greased your pan/ pans.
  2. Make the cake batter:
    In a large bowl mix the butter, eggs, sugar, yogurt.
    In a second bowl mix the dry ingredients: flour, baking powder, baking soda, salt. Mix dry ingredients with the wet ingredients until combined. Add the apples and mix until incorporated. Transfer to the pan(s).

  3. For the topping, combine light brown sugar , cinnamon, butter. Stir in chopped nuts.
  4. Spread the topping mixture on top of the apple cake batter.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
    Serve warm or cool completely.
