Moist and delicious apple cake with brown sugar and nuts.
Ingredients: (Makes 2 coffee loaf cakes or 9" X 13" cake)
1/2 cup soft unsalted butter or coconut oil
1 cup sugar
2 large eggs or egg replacer
1 tsp. vanilla extract
2 cups Extra White Gold All purpose cup to cup flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1 cup plant based yogurt or sour cream
2 peeled and chopped large apples (Granny Smith apples would be great here!)
1/2 cup packed light brown sugar
1 tsp ground cinnamon
1/4 cup soft butter or coconut oil
1/2 cup chopped nuts (almonds, walnuts etc..) (optional)
- Preheat your oven to 350 deg F. Greased your pan/ pans.
- Make the cake batter:
In a large bowl mix the butter, eggs, sugar, yogurt.
In a second bowl mix the dry ingredients: flour, baking powder, baking soda, salt. Mix dry ingredients with the wet ingredients until combined. Add the apples and mix until incorporated. Transfer to the pan(s).
- For the topping, combine light brown sugar , cinnamon, butter. Stir in chopped nuts.
- Spread the topping mixture on top of the apple cake batter.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
Serve warm or cool completely.
