Cheese Bouerkas  (or Burekahs)- No eggs, No yeast

Bourekas are made in a wide variety of shapes and a vast selection of fillings, and are typically made with a flaky dough. This is our easy dough version filled with cheese and spices.
This dough is great for quick pizza and flat bread.

Ingredients:

Dough:
1 cup Extra White Gold Bread flour
1 tsp baking powder
3/4 cup Greek yogurt
1/2 tsp salt

Ricotta cheese filling:
1 cup ricotta cheese
1/2 tsp salt
1 tsp Garlic powder and oregano
1/2 cup grated cheese

Egg wash
sesame cheese (optional)

Directions:

  1. Mix ingredients of the dough in a large mixing bowl. Cool dough in the fridge for 1 hour.
  2. Mix ingredients of the cheese filling together. Keep in the refrigerator until using.
  3. Preheat oven to 400 degrees F.
  4. Dust well the surface with gluten free flour. Roll out the dough into 2 rectangles.
  5. Fill with ricotta filling.
  6. Roll into a log and shape into a round roll. Brush with an egg wash
  7. Sprinkle sesame seeds or grated cheese. Bake for 25 minutes.

Great recipe! I made the filling with ricotta and spinach. All family loved it!
